Caramelised Apple Crisps

These easy apple crisps work as a lovely sweet snack or a decorative (and edible) topper to spruce up any pudding. I like to use them on top of my Blackberry, Mango and Apple Meringue Roulade. 

Ingredients:

  • 2 Eating apples, Braeburn are ideal

  • 100g white sugar

  • 100ml boiling water

Method:

  • Put the sugar in a small saucepan and pour the boiling water over it.  Stir to dissolve

  • Put the saucepan on the heat, bring to the boil and boil for one to two minutes.  Remove from the heat.

  • Do not peel the apples but cut extremely thinly across their equators into very fine slices.  Don't worry about pips, core, etc., they add to the look

  • Soak the apple slices in the hot syrup for a minute then shake excess syrup off and place on a baking sheet lined with baking parchment and bake in a cool oven set at 115c/95c fan for an hour.

  • After an hour, flip the slices over and very lightly brush each slice (top side only) with a little more warm syrup.  Return to the oven for a further hour.

  • Set the baking tray on a cooling rack.  The apple slices will crisp up as they cool.
