Buttery Garlic Chicken with Lemon, Parsley and Thyme
I just suddenly fancied Chicken Kiev flavours without all the bother of breast stuffing and then the rather messy task of dipping in flour, egg and breadcrumbs. This ultra quick, simple and easy chicken is the result.
2 chicken breasts
2 large and fat cloves garlic, grated
Juice of 1 small lemon
Some fresh thyme leaves
Lots of chopped parsley
Salt and pepper
Melt the butter in a small pan
Grate in the garlic
Add the lemon juice, thyme and seasoning
Drop in the chicken breasts, top side downwards. Cook them gently in the delicious juices, basting occasionally, for about 6 minutes per side or until cooked through
Stir in the chopped parsley and serve.
