Quick Pork Burgers

Potted Prawns

These chunky treasures are on a different planet from commercial burgers and just what you need in your freezer when you might have extra hungry people around.  They don't take too long to defrost and are quick and easy for anyone to cook, so perhaps those hungry people might look after themselves.

Ingredients

  • 1 onion, finely chopped 


  • Drop of oil 


  • 500g 5% pork mince 


  • 50g panko crumbs 


  • 1.5 tsps. chilli flakes 


  • 1 tsp. paprika 


  • zest of 1 lime 


  • Large handful coriander coarsely chopped including stalks (or parsley) 


  • Salt and pepper

Potted Prawns

Method

  • Sweat the finely chopped onion with a drop of oil and a pinch of salt in a pan until translucent 


  • Put all the ingredients into a bowl and use y our hand to squash everything together Using wet hands, form into four burgers 


  • Lightly brush the burger (not the pan) with oil and cook in a frying pan or griddle pan for three to four minutes per side until cooked through.  

Helpful Hints

The panko crumbs are important because they give softness to the burger.  You can substitute ordinary breadcrumbs but, curiously crisp panko crumbs give the softest result.

As they are made of pork mince,  you do of course want the burgers to be fully cooked all the way through.  However, this will take a shorter time than you might expect.  Over-cooked burgers dry out quickly.
