Caramelised Apple Crisps

These easy apple crisps work as a lovely sweet snack or a decorative (and edible) topper to spruce up any pudding. I like to use them on top of my Blackberry, Mango and Apple Meringue Roulade. 

Ingredients

  • 2 Eating apples, Braeburn are ideal 


  • 100g white sugar 


  • 100ml boiling water

Method

  • Put the sugar in a small saucepan and pour the boiling water over it.  Stir to dissolve Put the saucepan on the heat, bring to the boil and boil for one to two minutes.  Remove from the heat.


  •  Do not peel the apples but cut extremely thinly across their equators into very fine slices.  Don't worry about pips, core, etc., they add to the look 


  • Soak the apple slices in the hot syrup for a minute then shake excess syrup off and place on a baking sheet lined with baking parchment and bake in a cool oven set at 115c/95c fan for an hour. 


  • After an hour, flip the slices over and very lightly brush each slice (top side only) with a little more warm syrup.  Return to the oven for a further hour. Set the baking tray on a cooling rack.  The apple slices will crisp up as they cool.
