These pretty tomatoes are very simple and make the perfect light and healthy lunch with, for example, chicken breast and avocado, maybe with a little watercress salad on the side.
2 tbsps. tahini paste
1 tbsp. plain Greek yoghurt
2 cloves garlic
1 tsp. flaky sea salt
Pinch of ground cumin
Sliced tomatoes and cherry tomatoes
Toasted pine kernels (optional)
Put the tahini, yoghurt, sea salt and pinch of cumin in a bowl
Grate in the garlic
Blitz together with a hand held stick blender
Add a tablespoon or two of cold water if necessary to bring the sauce to the consistency of double cream
Drizzle over the tomatoes
I like to sprinkle something black over this, black sesame seeds look lovely, as do Urfa chilli flakes or Nigella seeds;
toasted pine kernels are delicious too, and it’s pretty and delicious enough without anything.
