Pears in Raspberry Juice with Star Anise

These sparklingly pretty pears are delicious for breakfast (or any time) with thick Greek yoghurt, or with ice cream as a pud.

Ingredients

  • 6 pears, halved, cores removed 


  • 400ml raspberry juice from a carton (or cranberry juice) 


  • 75g granulated sugar 


  • 2 star anise

Method

  • Pour the juice into a smallish saucepan and bring to simmering.  Remove from the heat. 


  • Add the sugar and stir to dissolve 


  • Add the pears and star anise Simmer for approx. 15 minutes until the pears are tender, timing will depend on the variety and ripeness of the pears 


  • If kept unopened in an airtight sterilised jar (run the jar through the dishwasher on a hot wash is fine for this), the pears should keep for at least 4 weeks
